• Ingredients:
  • 2 ripe bananas, mashed
  • 1 tsp ground cinnamon
  • 100g wholemeal self raising flour
  • 1 tbsp dark muscovado sugar
  • 1 tsp baking powder (double this is you can’t get wholemeal self raising flour)
  • 1 egg
  • 100ml skimmed or 1% milk
  • Spray oil
  • To serve:
  • Maple syrup
  • 0% Greek yoghurt

The pancakes make a good healthy breakfast with the added bonus of tasting YUMMY! It’s a great way of using up over ripe bananas.

Method

Place the flour, baking powder and cinnamon in a medium bowl. Whisk the egg & milk together and gradually whisk into the flour mixture to form a thick, smooth batter. Mix in the bananas.

Heat a non stick frying pan over a medium heat and spritz with spray oil. Add 4 spoonfuls of the batter to form 4 small pancakes. Fry for a minute or so until set and coloured on the bottom. Flip over and cook for another minute.

Eat the first batch then repeat.

Tip

Serve with maple syrup and 0% fat Greek yoghurt
