- 140g raisins or sultanas
- 2 ripe bananas, peeled and mashed
- 450g self-raising flour
- 100g soft dark brown sugar
- 2 tbsp Ovaltine
- 2 tbsp black treacle
- 400 ml skimmed milk
- 2 tbsp malt extract
- 100g reduced fat spread
A lovely malt loaf with the SixFix twist – malt loaf with a fruity banana flavour.
Preheat your oven to 160 oC. Grease and line a 2 lb loaf tin.
Put the milk, spread, raisins, sugar, Ovaltine, treacle and malt extract into a large saucepan. Heat gently until the spread has melted and everything is mixed well then allow the mixture to cool. Add the mashed bananas and flour, then pour into the tin.
Bake in your oven for 60 to 75 minutes, test by inserting a skewer. The loaf is ready when the skewer comes out clean.
Cool in the tin for 10 minutes before turning on to a wire rack to finish cooling.
